The Good Life Meatballs
They will be begging you for the recipe!!
1- In a large bowl, combine 2 lbs of Good Life Grass Farms grassfed ground beef, 3/4 cup of bread crumbs, 1 cup of milk, 1 egg, and 1 tablespoon of sweet and smoky dry rub. (there are many brands of dry rub, any will work but it is a key ingredient).
2-Throughly mix ingredients BY HAND. BY HAND, make large meat balls, about 1.5 inches in diameter. 2 lbs of ground beef will make enough meat balls to fill a 9 x 13 baking dish.
3- Preheat oven to 350F while you brown meat balls. Heat canola oil in a large skillet on medium meat. Rolls meatballs in flour and cook until light brown. We usually cook them in two batches, turning them about 3 times during the browning process.
4-As the meatballs are browned, place them back into the 9 x 13.
5-Mix together the following ingredients to make the secret sauce and drizzle evenly across the meatballs. (1 cup ketchup, 1 tablespoon sweet and smoky dry rub, 3 tablespoons distilled white vinegar, 2 tablespoons Worcestershire sauce).
6- Bake for 45 minutes until bubbly and hot.

Perfect Roast Beef or Leg of Lamb
In today’s high paced world, roast beef is often a forgotten dish. However, it is actually quite simple and hands off to prepare. If you love steak, roast beef could be your new favorite winter beef dish!!
1- Thaw out a 4 lb beef roast. Our favorite choices for this recipe are tri-tip, chuck, or sirloin tip (in that order).
2- Preheat oven to 450F. Season roast beef on all sides with salt, pepper, and your favorite seasonings. Our favorite is Cavender’s meat seasoning which already contains salt and pepper.
3- Place roast in a roasting pan with a fitted roasting rack. Roast at 450F for 15 minutes, then reduce heat to 325F and roast for 1 hour 15 minutes for medium rare (internal temp of 145 F) or 1 hour 45 minutes for medium (internal temp 160 F).
4- Remove from the oven and let rest for 15 to 20 minutes before serving.
5- Recipe and cooking instructions are the same for roast beef or leg of lamb!!
CAst Iron Chicken (3-4 lb bird)
Pastured chicken contains a flavor profile above and beyond anything you can get in the store, but cast iron and high heat take it to the next level………
-pre-heat oven to 500 F with cast iron skillet in the oven.
-butterfly the chicken by using scissors to cut out and remove the backbone and neck.
-first dry chicken off with a paper towl, then apply a light coat of olive oil to whole bird.
-season chicken with your favorite seasonings (at least salt, pepper, garlic powder).
-push down on rib cage to crack it and make it lay flat. Tuck wings back.
-pull skillet out of oven and place in chicken, breast down.
-cook for 30 minutes @ 450 F, flip chicken over and cook for 15 more minutes.
-YES ITS THAT EASY AND SOOOO DELICIOUS.
